The San Ignacio Province sits at the top of the Cajamarca region in Northern Peru. The farms are located in the buffer zones of a protected natural area and an organic methodology promotes a culture of protection to wildlife and species in danger of extinction. Coffee here is commonly fermented in wooden tanks built from fallen Romerillo trees (regulations prohibit the chopping down of them). Full of body and flavour with tasting notes of caramel and chocolate, citrus fruits with hints of florals on the finish. This coffee can be enjoyed through a range of brewing methods.
