Maricela Quinonez, a second generation coffee producer, farms with the assistance of her husband and children on their 2 hectare property near the town of Aldea San Marcos, in the Huehuetenango region of Guatemala. After careful harvesting, Maricela keeps the coffee cherries in the shade until they are ready to be depulped. The depulped coffee is put into a dry fermentation for 48 hours, a long and slow process due to the relatively cool climate. After the coffee is fermented and washed, it is then soaked in fresh, clean water for 12 additional hours before being placed on cement patios to dry. The coffee is moved every hour while it dries in the sun to ensure thorough and even drying. After four days in the sun, the coffee is sufficiently dried and ready to be stored until it can be delivered to our warehouse.
