The Café Sierra Azul cooperative takes its name from the blueish hue of the tree covered mountains of the El Triunfo Biosphere Reserve within which they farm. The cooperative’s members are unified in their aim to produce the region’s best speciality coffee whilst also improving the livelihoods of local communities. Whilst growing its coffee organically, the organisation also monitors birds and local wildlife to encourage awareness and care for biodiversity – particularly of species at risk of extinction. Benefitting from plentiful water, fertile soil and high altitudes, the beans produce a high quality coffee with a smooth, chocolate nuttiness and citrus finish. With a light to moderate body this coffee makes a wonderful filter/French press but also makes a perfect afternoon Americano on the espresso machine, with a lemon-tea finish.
