Third prize winner in the prestigious ‘Cup of Excellence’ competition, this special micro-lot was produced by small scale farmers belonging to the COORPROVER Cooperative.  Farming land high in the mountains in Huatusco, Veracruz, Mexico, it is widely known as one of the most innovative cooperatives in Mexico.  Large emphasis is placed on the teaching of best practice, organic methods, and harvesting takes place by selective hand methods. Plot sizes are small and work is carried out primarily by family members, from field work to pulping, which takes place at their own small wet-mill on the same day as harvesting.  After fermenting for between 14 and 24 hours, the beans are fully washed in clean water and then delivered to centralised cement patios for drying.  A key focus of the cooperative in recent years has been the inclusion of women within all aspects of the organisation, and this award-winning coffee was produced primarily by female-led farms.

Best enjoyed using filter brewing methods (to realise its true superiority!), this highly prized coffee has summer fruit sweetness, and a smooth honey feel.
